Description
Our whisky starts with Cheshire barley, fermented with wild yeast and pure spring water from our own source.
It is aged in oak casks beneath the Cat & Fiddle for three years, before being carefully blended with other select whiskies at our distillery. The blend is then given a final, indulgent layer of flavour by resting in a 50-year-old Oloroso cask within our cellars.
The result is an exquisitely smooth whisky, with a light sweetness and exceptional quality. Non-chill filtered, with no added colourings or flavourings.
Tasting notes:
Colour: Golden Sunset
Nose: Sugared almonds, Baked Biscuits, Candied Orange
Palette: Toffee apples, Shortbread, Sweet raisins
Finish: Soft wood, sweet vanilla
This has been bottled at 47% ABV in 700ml bottles.
The bottles are polished black porcelain with a papercut by the artist Georgia Low glazed with real gold. We are only a small business here, so releasing them in batches of 12 at a time.
